There are always drawbacks to everything, but in this situatuion the pros outweigh the cons.
And well done on building your PC from scratch - it's the better way to do it. But taking apart your XBOX invalidates your warrantee, so even if you could take it apart, you can't.
The chances of getting a virus are very small you would have to get someone who had designed a virus for the Xbox to upload it onto the servers and trick you into d/l it onto your own hard drive. Unlikey that it would happen.

Your explanation might apply were someone constantly swapping hardware, or installing and uninistalling programs. Yes, under such circumstances that might apply, but even if your not, even if you have standard compliant plug and play hardware throughout, and never install anything new, eventually you need to defrag.
Simple fact is, hard drives spell a host of potential problems, even if it's not defrag and formatting issues, then it's viruses, breakdowns, software conflicts or anything else which can be associated with keeping data stored on the system.
I hope you ignore me. I hope you get internet ready and start XBOXing away with no precautions, I hope you get a virus from the internet and lose your precious saved data. I hope your HD never recovers.
The more parts a machine has, the more likely it is to breakdown. PC owners are less concerned, because people like me know how to take it apart and put it back together again with a hand tied behnd my back. I'd love to see you do that to your precious XBOX.

I don't particulary want to go into techno-babble but ah well. A PC is just a jumble of parts stuck together there are no set manufacturers or the type of configurations they use when they are manufactured. This means there are a huge variety of different (although it is small) PCs for the programmers to make programs/games for. They just design them to work the the maximum amount of PCs that they can. When you install these programs 9 times out of 10 the program will not work perfectly with your system. This means files are scattered Dlls are shared.
You have to Defrag you drive so that these stray files are but into the right order letting the HDD load things quicker as it reduces skipping. You only need to format the HDD on a PC if it really starts to screw up (lots of errors etc)This normally fixes the HDD etc.
These problems won't affect the Xbox because there is only ONE system for the programmers to code for. This means that you can get perfect saves and temporary use on the XHDD without having to Defrag and definately not format it.

Windows is a solid program but it is destroyed internally by programs using shared Dlls and removing them. This stops it from working properly. Windows would never break if you never installed any other non-MS programs on it and no games (well almost never).
