I'm imagining that all three consoles have different processors, graphics engines and sound cards, all with different software and drivers and different capabilities. In order to bring the game out on the 3 consoles, you have to change the game to fit the software, forcing incompatibility. I may be worng on this one, I don't KNOW, but I'm pretty sure that any game that could be played interactively between the three would have to be very basic, and use as little of the consoles abilities as possible.

That's because it's the same game, designed for all platforms. Even if you get the same game on PS2, XBOX and GC, it's still essentially three different games.
