So is there anything that can do what I want, or am I better off buying a cheap laptop for the photos and a separate mp3 player?
Keep in mind that just because the PSP has a usb port it doesnt mean its a hub and can host usb connections from other devices. You can potentially damage your device or your PSP by plugging them into each other if the PSP cannot host devices. So approach randomly plugging things in with caution.
If you can use a mate's PSP, check out the compatibility with a camera - I assumed the camera icon would let you use one, but now I'm not so sure. :(
I haven't got a mini-USB to mini-USB lead to test it with.
Obviously the camera has it's own power supply, so it would just be a case of connecting to the PSP via the USB, then I can browse the contents of the camera on the PSP and copy over etc?
The PSP only takes Sonys own memory cards, right? So I need to think about the cost of those when pricing up. I'll have a look on eBay for modded PSPs.

Yes it does, and camera support (though check compatibility).

PSP will do this, actually, it's getting better with each firmware update.

Get a second hand PSP already changed to custom firmware on ebay (look for Firmware 1.5 in the description). The new ones are a lot harder to do. The thin ones are nice, and have TV out, but they aren't as good at homebrew as yet (will change with time).

Should do as long as you have a mini USB cable and the camera is fairly recent.

You need to change everything to MP4, but there are free video editors on the web to do just that at the click of a button. Works well though once you've done it and you could carry several 4GB/8GB Memory Sticks full of games and films.
The GP2X has the advantage of a RISC Processor, but it isn't as well supported as a PSP any longer for homebrew and games. I'd go with the PSP based on my experience of it over the time I've had Custom Firmware. As it currently stands Dark Alex (the Spanish guy pretty much soley responsible for updating Custom Firmware) is neck and neck with Sony's official releases, so all the stuff the official firmware can do, the Custom can do too, with the advantage of storing PS1 games on Memory Stick and playing them from that. So you can have: PSP games, PS1 games, SNES, Megadrive and a whole host of emulators, homebrew etc. Plus a decent internet setup (though mini usb keyboard is really needed), MP3 player and really clear screens for video.
Downside is battery life, but ebay comes in here again and you can buy double strength batteries, plus it's easy to swap them over (like a camcorder or camera), plus recharge using a special USB cable if you need to.

4. Watch Divx etc.

Good if you can pick one up cheap, and the homebrew scene is still going so there's plenty of games, tools and emulators around for them.
