Instead of lobbing the keeper press X and square simultaneously to fake a shot and run around him......then slide it into the corner!!!

follow what Bonus says however theres a few tactical ways of approaching this, it really depends on how far you are from the goal or how near you are to the keeper, if your far its a good to press the run button (R1) just before you chip the ball, but if your close to the keep and you 1 on 1 its best if you really slow down at the last minute, stop if you will and then chip, this will keep the ball down but high enough to lob the keeper, it is hard to master scoring with chipping but great fun when they go in.

Whilst the shot bar is rising tap r1 and you'll do a low lob.
