Yes it is possible, as many probably know.
First of all, sorry to tell you but this is only available in Multiplayer mode and secondly is only possible with a cheat enabled server (so in many people's cases you'll just have to start your own with the bots or if your luck a lan)
*--------Start a free for all multiplayer game.
*--------Once loaded up goto the console (usually shift + ¬)
*--------type in "devmapall ffa_deathstar" (or any ffa map)
*--------once the game in loaded press 1 so you are just holding the handle of your lightsabre
*--------then goto the console again and type "/thedestroyer"
there you go you now have a double ended light sabre....NICE!
I should probably have put this in the cheats forum but I thought that more people would see it :)
if you die you'll have to do the last two steps mentioned above to get your double ended light sabre back. May the force be with you.
