The reason is simple - GAMEPLAY, the single most important element of a game. I'm not sure how they manage it but Nintendo (and RARE) seem to add something little bit special to their games.
Don't get me wrong, there are some really GOOD games I've played on my PS2, but the only truly GREAT one I've played so far is GTA3 (it's definitely in my all time top five). But even that's starting to get a wee bit boring, mainly due to the lack of multiplayer options (maybe rockstar will include that in GTA3 though).
Speaking of which, I know Nintendo consoles seem incapable of producing good beat-em ups, racers, etc. But where Nintendo really does shine through it MULTIPLAYER games. Games like Mario kart, Golden eye and perfect dark saw me and my mates wearing out 5 controlpads, and many a fight was started when someone used a lightning on the last lap at Mario kart! I know you get some really good games you can play over the net (Quake), but its just not the same if you can't see the frustration on your mates face.
There some other reasons Nintendo's games are so good, such as attention to detail, longevity, and Zelda (which proves that Rpgs' don't have to be linear - FF). But I'm not gonna get into that right now.
So It looks like we're gonna have to do one of two things when the gamecube comes out:
(1) Buy it and marvel at shigero myamotos latest masterpiece, or
(2) Nobody buy it, forcing Nintendo to do what SEGA have done, and focus on making software that everyone can play!
Either option suits me fine, but if there's a crappy pokemon game in amongst the launch titles I think I'll opt for option (2).
Thanks for reading my rant
