All games will run off the Mircosoft servers so once you have the years subscription you can use any game and use it as much as you like. You will never ever see any XBox Live game which you have to pay a seperate subscription for as Mircosoft wouldnt allow them to release the game.
So for £40 you get XBox Live for a year, a Communicator which is the headset with speaker, microphone and memory card type thing that fits into the controller. The Live discs and 2 demos which are on the disc. Then there are going to be a few online games available now and soon. These are Moto GP, Whacked these are the 2 demos, but full version are available. And the MechAssault, Unreal Championship and Ghost Recon. Loads more are in the works like Halo 2. Also some games allow you to download extras to use in the game.
Mech Assault, for example in an Xbox game in the shops, but if you have Xbox live then you can play against people accross in the internet.
I think what you might mean to be asking is if you have to pay to play these games online, in which case the answer is no.
Once you've bought a game you can play it as much as you like.
Once you've got a years subscription to Xbox LIVE you can play whatever you like whenever you like without paying an extra penny.
I think that they might charge extra for certain downloads though.
