So we've seen the screen shots (i've even managed to see them in more than 16 colors : ) ), and nobody is really impressed. One argument in their defense is that they are only still images, which may not protray the game as well as clips showing motion. Other arguments suggest that it's early enough to expect noticable improvements.
I have another theory.
Consider mario 64. Now, to me, mario sunshine fills the same kind of mould, in playing style, but particularly in the apperance of the game - simple and cartoony.
How much graphical 'improvement' can the game really take?
Well, eliminate pop-up and fogging. Smooth out all those polygon-deficient shapes. Add detail here and there.
But so far as i can tell, all that's been done, and nicely so.
What about effects and detail like we see in, for example star fox screen shots?
I have to say, i really don't think that kind of detail has a place in a title like mario sunshine. The cartoony feel is based on the simple colors and textures that we are familiar with. It's somewhat similar to cell shading in the overall result.
If nintendo start to add fine effects like we see in the star fox adventures -the fur, backgrounds and detail- we cease to have something with that mario style. I really don't want to see that happen.
Maybe one more example of what i mean. Remember the sr news story on the futurama license? If not, the details aren't really important. Just consider the style of the cartoon - nice and simple colors and textures. The story mentioned how the game would almost mirror the apperance of the cartoon. I think this is similar to the mario sunshine style, it has to be kept simple, or it wouldn't look like the tv series, however nice the graphics were.
So maybe we don't need to see graphic boundaries pushed back too far in mario sunshine. Maybe they've reached the ideal already.

Mario has always been colourful and not detailed and that is they way it will be and to me it looks gorgeous, especially todays shots.
Definatly my most anticipated game.

I don't really find the idea of using a water-cannon to clean paint off of the walls as too intreaging, but i'm sure we'll get to spray people in the face! :D
I also agree with your point about how we need it's appearence to have certain boundries, otherwise it just wouldn't be Mario!
