I don't understand what you mean in this, are you talking about hard disk recorders or pc/macs? I think the best way to get an answer would be to visit a studio of some sort maybe even phone one. Sorry I can't help you on this.
Audio (.wav) files are like CDs/Tapes/LPs, usually live instruments and vocals, they have huge files though, it can take around 5 mins on a 56k modem to download a 10 second file.
MP3s are great, they have cd quality, they support vocals and they're around 10 times smaller than .wav files, they're editable like the .wavs but you need an MP3 player to listen/edit them.
Midi's and Wav files don't need special players, if your soundcard is good they'll work fine.
I havn't heard of VOC files, i'm guessing they're made on a special program like Sebelius, emagic, I can't remeber the file names of other systems.
what was the means of your intrest anyway? if your thinking about making a midi song file, i'd definatly recommend Cubase or Cubasis (they vary from around £30-£120 for V3.7), if not I'm pretty sure Ebay software support Midi files, but a keyboard with a midi output is a good start.
