For me on a PERSONAL level, and how much I enjoyed a match and the build up to it my fav would have to be:
Too Cool vs Rikishi
This was a Smackdown main event a couple of weeks before No Mercy 2000, just after we found out it was Rikishi. In that episode Too Cool got some backstage segments, the bit where they walk down the corridor towards the ring looking tough and a MAIN EVENT!! The only main event I ever saw them in, and although they lost, I loved every second of it. Unfortunately, I don't think I'll ever see it again...
And nearly on the same level:
Too Cool vs Rikishi and Haku
An episode of RAW earlier this year. A backstage segment and a longish match, in which Too Cool came so close to winning after the Hip Hop Drop.
But getting off the subject of Too Cool, my other faves would be:

This topic brings up a memory...I heard there was an episode of Smackdown where it was Sexay, Blackman and Trish against some people, can't remember who. They danced after, and there was supposedly lots of funnty backstage stuff. I was on holiday. I WISH I'd seen that. Ah well.
