If it was manufactured before August 2002, it is definitely a v1.0.
August 2002 or after it could be v1.0 OR v1.1
After December 11th 2002, it could be v1.2
You bought yours new on 16th April 2003, meaning it is probably a v1.2. However, the only way to be sure is to check the bios/kernel version.
This is done by going to the "settings" option in the XBox dashboard and selecting "System Info". At the end of the text you will see something like:
K: 1.00.xxxx.01
D: 1.00.xxxx.01
If you don't see this you still have one of the first XBox v1.0
If the xxxx = 4034 or 4036 or 4627 you have a v1.0
If the xxxx = 4817 or 4972 you have a v1.1
If the xxxx = 5101 or 4920 you have a v1.2
The difference between v1.0 and v1.1 is not as great as the difference between these and a v1.2. Internally, the v1.0 and v1.1 are very similar, so fitting a mod-chip in each is pretty much similar. V1.2 has different solder points.
The problem is, different batches (irrelevant of whether they are v1.0, v1.1 or v1.2) were put together with different sourced components, so a DVD drive in one v1.2 could well be different to a DVD drive in another v1.2. This gives rise to different responses to different blank media (i.e. some problems). Having said that, v1.1 upwards tend to have better DVD drives and media reliability.
Most chips these days work on any version XBox from any region, so all of the above is a non-issue except for the DVD drive. Also, make sure you get a chip that you can disable for when you use XBox Live!.
Hope that helps.
