Well, bearing in mind that I can only get one game now and one for Xmas, and the fact that I've already got mario kart, I've narrowed it down to either Simpsons hit and run or the return of the king. I've been hearing good things about both of them, but what is more enjoyable and will see me through (as in almost completion) by Xmas? Any advice?

I would recommend F-Zero GX, I got it today and it's so very addictive and tricky and fast that it'll definitely see you through til Christmas. Especially combined with Mario Kart.
Admittedly this isn't one of your options, but I think it's better than both of them personally.
I would get Return of the king, spent four hours solid playing it threough with my matew today, pure awesomeness.

Personally I don't really like racing games. I only got Mario Kart because it's not all about the racing.

The only reason i am getting mario kart is because it has Mario in and that it is a racing game with a twist.

Go with the simpsons.
I'd go for The Simpsons: Hit and Run, but not before you've at least considered the likes of F-Zero GX, Viewtiful Joe, Rebel Strike, 1080: Avalanche, Mario Party 5 and Billy Hatcher & the Giant Egg.
