Work out the difference between the accelerator and the brake and guess which one to use.

(If you said brake that explains why you have a Playstation 2 in the first place)

I use manual gears and press lightly on the X button then ram it down at the green light and it goes perfectly!!

I've got 4 cars in my garage now an after finishing the first 3 tracks in GT mode only to be rewarded with the same car i was using only in red (d'oh), got some cash for it anyways haha.

I tested this on GT1 so I don't know if it's still true. The best way to do it is just to hold it down firmly and go off that way. Ideally, you want to get the max acceleration without spinning the tyres/slipping the clutch, but it differs, is very hard and there's not that much gain on my method, especially if you've got a 4WD drive car.

It very much depends on the car you're using. For the most part, fully revving the engine at the startand keeping the accelerator down does result in the quickest start. This is certainly the case with 4WD cars, like the Skyline. If you've got a low powered FF car, this should also work, as the weight of the car is mainly over the wheels that supply the power. With MR and FR cars it is probably best to start with the rev counter at half way and as soon as the car gets moving, hold the accelerator down hard, this should minimise wheelspin. As with most things Gran Turismo, it always pays to take the car out on the test tracks and experiment to see which method works best.

If you have a powerful car - such as the Dodge Viper - try starting in 2nd gear, with the engine revving high before the lights go green. It can save you a lot of wheelspin.

GT3's automatic TCS on GT mode seems to do the job pretty effectively. If you find you are spinning, turn the setting up although the car can become unresponsive at times. A few thrashings round the Complex String will help you. A good way to simulate the start of a race is by holding down the hand brake. This engages the cluth, even in FF cars while you're stationary.

Use the analogue stick. Experiment with various revs to find the point the wheels start to spin, and use those revs to pull away, then floor it.

Usefull at roundabouts and traffic lights too.
