Ahh, my favourite game. Otherwise I'd tell you to go to GameFAQs but I'll help you myself since it is Manhunt.
Basically, you hold down Circle or Square while in the execution position (behind the person) and follow them silently until the cursor above their head turns yellow (violent) or red (gruesome).
