I think the next Resi is called Resident Evil: The Room. It focuses on escaping from building, rather than killing zombie dudes. There is a preview in May OPS2.

I don't know about any future Resi games for the PS2. Only one I know about is Resi 4, but that'll be a GameCube exclusive
