Recently I played it again, it's great now!
I've mastered the method of ramming people and all the fun has returned to the game, I love it!
Instead of racing I try and take as many people out for the first 2 laps then just burn it round the third, plus on the later levels I just concentrate on taking out my rivals so that I get a bigger lead!
I got 16 people out of a race the other day on normal difficulty, I'm all impressed with myself. The game would be so boring if you couldn't kill people.
Story mode is hard and I'm about to do the last GP on normal mode, woooooooo!

I don't mind the two per kart, but most of them look rubbish, I want proper karts back. It's also too slow and easy.

That was a great addition to the last one, apart from the fact you couldn't replay levels on multiplayer...

Don't think so. That's one of the reasons I got the cube version, in the hope it'd have something decent like that. Played it once then shifted it with all my other cube stuff, all the re-approaches to N64 titles that are too similar to the originals (which I still own) are getting very tiresome.
Played Mario Golf a few days back, it's good but I wouldn't buy it myself as it's mechanics and control are all but identical to the N64 one.
I've moved on.
