Actually, although it is extremely difficult to find the link from the apple website, quicktime is available independent of iTunes.

There are also a number of programs which mimic the quicktime plugin/program available, the best of which is "Quicktime Alternative".

But you can burn the music to a CD-RW and rip it back as MP3, as with any other disc. That's what I do.
