My dad bought me a PSP1000 when he was in Japan. I cannot play 'Coded
Arms' bought in the UK on it. It says I need to upgrade the system
software. How do I do this?

When I say "Go to GAME", i don't mean launch the game. I mean go to the Game section of the Menu.

Just to clear that up.

Make sure the PSP is plugged into the mains;
Boot the PSP without the game in;
Insert the game once the Menu has loaded up;
Go to GAME;
Look for the PSP Update and run it.

keep it plugged in the mains though, or it won't work.
