George Lucas has said that he wont be releasing DVD editions of the Star Wars movies until he's completed filming on the second prequel, since he wants to give the Star Wars DVD releases special atention...

Nice idea, but I bet they're working on that as a separate project. It would make more money that way.
I'd like to see deconstructions of the scenes, showing before and after effects have been added, with the angle button allowing you to flick between them.
I'd also like to see as many old interviews of the cast and crew of the first trilogy. There must be loads of stock footage of interviews, plus tons of documentaries and filmographies that have been done over the years, and collecting them all together would be really simple. Also, it would be nice to interview the actors now, like Mark, Carrie and Harrison to give a retrospective on the filming and their characters.

I would like to see a huge interactive data base of everything Star Wars!! Much like the Insiders guide for PC you can view every character, creature, vehicle, weapon, gadget, planet and location.
There should be info for each and every character that has appeared in the films with the making of/creating of each one - Same goes for everything else!!
A directors commentary would also be a brilliant feature - I would love to know what inspired every last thing that Lucas created!!
