Roasted Vegetable & Goats Cheese Tower Layers of roasted Mediterranean vegetables and puy lentils topped with a slice of glazed goat’s cheese and served with a fresh creamy herb sauce.
Seared Salmon Fillet A succulent seared salmon fillet peppered, lightly grilled and presented on a bed of asparagus and lemon hollandaise sauce.
Jamaican Jerk Chicken A whole chicken breast marinated in light jerk spices, char-grilled and served on a bed of sweet potato mash with a tangy tomato salsa.
Pork & Apple Encroûte Tender pieces of pork and fresh apple encased in puff pastry, baked until crisp, and served with a creamy cider apple sauce.
