I think Final Fantasy 8 is excellent and a contender for the best in the series, along with Final Fantasy 7. I wasn't too keen on 9, but did enjoy 10. Have only honestly brushed the surface of FF1-6, though I have listened to all the soundtracks.
As for memorable moments - there are too many to remember :D Things like Aeris' passing (FF7), all the ending sequences, the first time you leave Midgar City in FF7, using the biggest summons/GFs for the first time, fighting the biggest bad, tonnes of stuff. It all comes flooding back every time these topics are brought up.

Anyway in regards to the topic.. I'd suggest getting Final Fantasy 9 first, I did and I found it the easiest way to get into the series. It's not necessarily the best one, which is good because it eases you in, and you will love it and it'll make you want to play the rest of the games. I played 9 before I'd played any of the rest and it's what got me into the series. Then after that start getting the rest, and when your really becoming quite a fan, you should look into 7 and below, which have really dated graphics but the same depth and gameplay of the others which makes them harder to swallow but still as rewarding.
Also get 9 first because it features possibly the best bunch of characters.
