Surely it's because they won't be sued by the shysters from the sherry syndicate? (Try saying that out loud, it's not easy.)

You can also get Special Reserve Cheddar, but it's rare. You'll have to hunt around.

I saw some cheese in Tesco the other day. It was Special Reserve Red Leicester.
