On GTA3, I have completed all the main missions and the telephone missions, but in the stats menu, it is still saying that I have still got missions to complete and I don't know what or where they are, because its not the taxi or police etc missions, because I have tried doing them and no luck. So I don't have a clue what to do now. If anybody knows what and where please tell me.

The answer to all of your questions is the following:

*Marty Chonks Missions: Complete
*Diablos Missions: Complete
*King Courtney Missions: Complete
*Ice D Missions: Complete
*Collecting the Blue Blobs: Incomplete

And I haven't collected all the hidden packages, performed all the unique stunt bonuses and finished the Rampages. But I didn't think that they where main missions. I thought that they where just side missions.

Next to Joeys garage, the phone only rings during the day, but you can hear it.

I think theres some missions that you can't go back and do once you've done another mission.

Like you can't rescue the old china man after you killed him.

The phone jobs for the Diablos on Portland, King Courtney on Staunton and Ice D on Shorevale are also missions that count for the stats.

Have you done the Marty Chonks telephone mission near Joeys place, phone rings during day but doesn't show up as a mission?

The drive round the parks picking up coloured "blobs" are missions, 1 on each Island!

The phone missions on Shoreside Vale? You don't have to do these to finish the game!

Also the missions like Mafia Massacre, Casino Calamity with the RC car are also missions as well, I think.

I've just started again and am going through all missions and rampages, jumps, packages etc so good luck!

people like Joey give you missions that aren't essential to complete. Go find them to find your extra missions. Go find all the gangsters. That should help.
