...why don't they remake ALttP, a full 3D GameCube update. It would be amazing, playing through one of the best games ever created in a 3D perspective.

Nah - one of the classic elements I love about Zelda is the surprises and plot twists, if they redo old stories we'll already know them...
I think the 2D dungeons would work fine, biggest problem would be the dark bits, like just after you escape from the castle.
I'd like to see some of the 'classic' 2D Zelda games converted into full-3D experiences ...some-day when Miyamoto's brain is almost dried-up, running very short on new ideas.
It'd be a good experience to be able to actually look around and see everything around you, but would the gameplay really be as good?
After all, these games have been designed to suit the top-down, 2D style.

I never played it, though I wouldn't mind a Kid Chameleon Remake, or ALex the Kidd.
